The Surette team wants to pave a new road and discover naturally occurring sour flavours in America, which will in turn help us to develop natural extracts from plants and fruits encountered on a daily basis, yet whose potential goes unnoticed. We hope to uncover new culinary territories within the natural and human environments of this land we call home.
