Cantaloupe and raspberries macerated in apple & maple balsamic

Balsamic in a fruit salad? Oh, yes! The happy fruity and tangy blend of balsamic with fruit will surprise you.

Ingredients

Syrup

  • 1 cup (250 ml) water
  • ½ cup (125 ml) maple syrup
  • ¼ cup (60 ml) apple & maple balsamic
  • 2 cinnamon sticks
  • 10 peppercorns
  • 1 tbsp anise seeds
  • 5 cardamom pods

Salad

  • 1 cantaloupe, peeled, seeded and cut into cubes
  • 1 ½ cups (375 ml) fresh raspberries

Toppings

  • Whipped cream or yogurt
  • Mint leaves
  • Edible flowers

Preparation

  1. Put all the syrup ingredients in a small saucepan and bring to a boil. Lower the heat and reduce the liquid by half. Filter through a sieve. Let cool.
  2. Put the fruit in a bowl and pour the syrup. Refrigerate for at least 4 hours.
  3. Serve the macerated fruit in cups with a bit of syrup. Top with whipped cream or yogurt, mint leaves and edible flowers.

Prepare the recipe with your favourite fruits. The salad is even better when prepared the day before.
